Dehydroacetic acid is a broad-spectrum food preservative that inhibits bacterial growth and prevents food spoilage. However, consuming foods with excessive dehydroacetic acid content, which may accumulate in the human body, can damage vital organs including the liver, spleen, kidney and brain. This dataset is primarily used to monitor the dehydroacetic acid content in our company's oat crisps. Safety assessments of the dehydroacetic acid levels in oat crisps can be carried out via the test data, to avoid food safety incidents caused by excessive dehydroacetic acid content in the products themselves. 1. Sample Source: All oat crisp samples obtained through random sampling inspection in this project are sourced from the products manufactured and sold by our company. 2. Data Detection: Relevant test data were acquired by testing oat crisp samples in accordance with the Second Method of GB 5009.121-2016. 3. Data Determination: The calculation formula for dehydroacetic acid content is as follows: X=(C-C0)×V×1000×0.5/(m×1000×1000) Where: X: Dehydroacetic acid content in the test sample, unit: g/kg C: Mass concentration of dehydroacetic acid in the sample solution, unit: μg/mL C0: Mass concentration of dehydroacetic acid in the blank sample solution, unit: μg/mL V: Total volume of the sample solution, unit: mL m: Mass of the weighed sample, unit: g The standard limit for dehydroacetic acid in oat crisps is ≤0.5 g/kg. Any batch exceeding this limit is judged as unqualified. 4. Data Application: Through analysis and interpretation of the random sampling inspection data, we can determine whether the dehydroacetic acid content in oat crisps meets the safety standards, so as to avoid food safety issues caused by excessive dehydroacetic acid content in the products themselves.
