甜蜜素（以环已基氨基磺酸钠计）是属无营养的甜味剂，主要用于增加食品的口感，其甜度是蔗糖的30~40倍，过量使用可能会对身体健康造成危害。本数据主要用于监测本公司内部生产销售环节豆腐干中甜蜜素含量情况。通过检测数据， 对豆腐干中甜蜜素含量进行安全性评价，为政府部门监管提供依据，避免因甜蜜素超标使用而产生食品安全问题，进一步保障消费者的食品安全。1、样品来源：本项目抽检的豆腐干全部来源于公司内部生产、流通环节市场主体销售的豆腐干。 2、数据检测：样品经前处理后，根据GB5009.97-2016第二法检测原则，利用液相色谱仪进行检测，得出数据。3、数据判定：甜蜜素量的计算，X=(C x V) /( M x 1000)。X为试样甜蜜素含量，单位为g/kg；C为测得值，单位μg/mL；V为样品溶液定量体积，单位mL；M为试样质量，单位g；豆腐干中甜蜜素含量标准要求为≤0.5g/kg。4、数据应用：通过抽检数据分析研判，我们可以判断豆腐干中甜蜜素含量是否符合食品生产标准，避免因甜蜜素含量超标而产生的食品安全问题，为监管提供依据。
Sodium cyclamate (calculated as sodium cyclohexylsulfamate) is a non-nutritive sweetener primarily used to enhance the taste of food. It is 30 to 40 times as sweet as sucrose, and excessive use may pose risks to human health. This dataset is primarily used to monitor the sodium cyclamate content in dried tofu products during the production and sales links within our company. Based on the test data, safety evaluations can be conducted on the sodium cyclamate content in dried tofu, providing a basis for government regulatory supervision, preventing food safety issues caused by excessive sodium cyclamate use, and further safeguarding consumer food safety. 1. Sample Source: All dried tofu samples collected in this project are sourced from dried tofu sold by market entities in the internal production and circulation links of our company. 2. Data Testing: After pre-treatment, the samples are tested using a liquid chromatograph in accordance with the second testing method specified in GB 5009.97-2016, and the test data are obtained. 3. Data Determination: The calculation formula for sodium cyclamate content is X=(C × V)/(M × 1000). Where X is the sodium cyclamate content in the test sample, unit: g/kg; C is the measured value, unit: μg/mL; V is the fixed volume of the sample solution, unit: mL; M is the mass of the test sample, unit: g. The standard requirement for sodium cyclamate content in dried tofu is ≤0.5 g/kg. 4. Data Application: Through analysis and evaluation of the sampling test data, we can determine whether the sodium cyclamate content in dried tofu meets food production standards, prevent food safety issues caused by excessive sodium cyclamate content, and provide a basis for regulatory supervision.
