甜蜜素（以环已基氨基磺酸钠计）是属无营养的甜味剂，主要用于增加食品的口感，其甜度是蔗糖的30~40倍，过量使用可能会对身体健康造成危害。本数据主要用于监测本市场内部销售环节水产干制品中甜蜜素含量情况。通过检测数据， 对水产干制品中甜蜜素含量进行安全性评价，为政府部门监管提供依据，避免因甜蜜素超标使用而产生食品安全问题，进一步保障消费者的食品安全。1、样品来源：本项目抽检的水产干制品全部来源于市场内部生产、流通环节市场主体销售的水产干制品。 2、数据检测：样品经前处理后，根据GB5009.97-2016第二法检测原则，利用液相色谱仪进行检测，得出数据。3、数据判定：甜蜜素量的计算，X=(C x V) /( M x 1000)。X为试样甜蜜素含量，单位为g/kg；C为测得值，单位μg/mL；V为样品溶液定量体积，单位mL；M为试样质量，单位g；水产干制品中甜蜜素含量标准要求为≤0.5g/kg。 4、数据应用：通过抽检数据分析研判，我们可以判断水产干制品中甜蜜素含量是否符合食品生产标准，避免因甜蜜素含量超标而产生的食品安全问题，为监管提供依据。Sodium cyclamate (calculated as sodium cyclamate salt) is a non-nutritive sweetener mainly used to improve the taste of food. Its sweetness is 30 to 40 times that of sucrose, and excessive use may pose hazards to human health. This dataset is primarily used to monitor the sodium cyclamate content in dried aquatic products sold in the local market circulation links. Based on the test data, safety evaluations of sodium cyclamate levels in dried aquatic products can be carried out, providing a basis for government regulatory departments to prevent food safety issues caused by excessive use of sodium cyclamate, and further guarantee consumers' food safety. 1. Sample Source: All dried aquatic products sampled in this project are sourced from dried aquatic products sold by market entities in the production and circulation links within the local market. 2. Data Detection: After sample pretreatment, the samples are tested using a liquid chromatograph in accordance with the second test method specified in GB 5009.97-2016, and the test data are obtained. 3. Data Judgment: The calculation formula for sodium cyclamate content is X=(C × V)/(M × 1000). Where X is the sodium cyclamate content in the test sample, unit: g/kg; C is the measured value, unit: μg/mL; V is the fixed volume of the sample solution, unit: mL; M is the mass of the test sample, unit: g. The standard requirement for sodium cyclamate content in dried aquatic products is ≤0.5 g/kg. 4. Data Application: Through analysis and assessment of the sampling test data, we can judge whether the sodium cyclamate content in dried aquatic products complies with food production standards, avoid food safety problems caused by excessive sodium cyclamate content, and provide a basis for regulatory work.
