纳他霉素是一种常见的生物防腐剂,用于保护食品和延长其保质期,但过多食用可能会导致人体肠道菌群失衡、部分人群还会出现过敏反应。本数据可以对糕点中纳他霉素含量的情况进行安全性评价,为政府部门监管提供依据,避免因纳他霉素含量超标使用而产生食品安全问题,进一步保障消费者的食品安全。1.数据采集:采集样品编号、检验数量、样品名称、项目、方法、最大限定值、报告值、单位等信息; 2.数据处理:(1)是否超出标准值,报告值为未检出、报告值小于等于最大限定值的为未超出,反之为超出,具体使用IF、OR的函数;(2)糕点中纳他霉素含量监测总数,为数据统计范围内总检验数量;(3)糕点中纳他霉素含量检出问题项次数,通过SUMIF函数将超出标准值的检验数量求和;(4)糕点中纳他霉素含量问题发现率=糕点中纳他霉素含量检出问题项次数/糕点中纳他霉素含量监测总数*100%。

However, excessive intake may lead to intestinal flora imbalance in humans, and some individuals may experience allergic reactions. This dataset can be used to conduct safety evaluation of natamycin content in pastries, providing a basis for government regulatory departments to avoid food safety issues caused by excessive use of natamycin, and further ensuring the food safety of consumers. 1. Data Collection: Collect information such as sample number, number of tests, sample name, test item, test method, maximum allowable limit, reported value, unit, etc. 2. Data Processing: (1) Judgment of exceeding the standard value: Cases where the reported value is "not detected" or less than or equal to the maximum allowable limit are classified as "not exceeding the standard"; otherwise, they are classified as "exceeding the standard". The IF and OR functions are utilized for this classification. (2) Total number of monitored natamycin content tests for pastries: Refers to the total number of tests within the data statistics scope. (3) Number of detected problematic items of natamycin content in pastries: Sum the number of tests exceeding the standard value using the SUMIF function. (4) Problem detection rate of natamycin content in pastries = (Number of detected problematic items of natamycin content in pastries / Total number of monitored natamycin content tests for pastries) * 100%.
