本数据主要用于监测三门青蟹(肉)硒指标的变化情况,用于监管部门加强对三门青蟹养殖经营过程的监管。1.样品来源:本项目抽检的青蟹全部来源于三门县流通环节市场主体经营的青蟹,检测部位是肉。 2.数据检测:青蟹样品经处理并取出蟹肉,经消解后,由电感耦合等离子体质谱仪测定,以硒元素特定质量数定性,采用外标法,以硒元素质谱信号与内标元素质谱信号的强度比与硒元素的浓度成正比进行定量分析。 3.数据判定:硒含量的计算,x=(ρ-ρ0)×v×f/m。试样硒含量,单位为毫克每千克或毫克每升(mg/kg或 mg/L);ρ试样溶液中被测元素质量浓度,单位为毫克每升(mg/L);ρ0试样空白液中被测元素质量浓度,单位为毫克每升(mg/L);V试样消化液定容体积,单位为毫升(ml);f试样稀释倍数;m试样称取质量或移取体积,单位为克或毫升(g或 ml)。计算结果保留三位有效数字。食品中硒含量大于等于0.150mg/kg为富硒食品,硒含量大于等于0.075mg/kg小于0.150mg/kg为含硒食品。 4.数据应用:通过抽检数据分析研判,对通过抽检结果加强该区域水质、土壤的检测以及养殖过程的监管,提升三门青蟹质量水平。
This dataset is mainly used to monitor the changes of selenium index in the meat of Sanmen mud crabs, so as to help regulatory authorities strengthen the supervision of the breeding and operation process of Sanmen mud crabs. 1. Sample Source: All the crabs sampled in this project are from the crabs sold by market entities in the circulation links of Sanmen County, and the tested part is the crab meat. 2. Data Detection: After the crab samples are processed, the crab meat is taken out. After digestion, the samples are determined by Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Qualitative analysis is conducted based on the specific mass number of selenium element. The external standard method is adopted for quantitative analysis, where the intensity ratio of the mass spectrum signal of selenium element to that of the internal standard element is proportional to the concentration of selenium element. 3. Data Judgment: The calculation formula of selenium content is x=(ρ-ρ₀)×v×f/m. The selenium content of the test sample is expressed in milligrams per kilogram or milligrams per liter (mg/kg or mg/L). Where: ρ is the mass concentration of the detected element in the test sample solution, with the unit of mg/L; ρ₀ is the mass concentration of the detected element in the test blank solution, with the unit of mg/L; V is the constant volume of the digested test sample solution, with the unit of milliliter (ml); f is the dilution factor of the test sample; m is the weighed mass or pipetted volume of the test sample, with the unit of gram or milliliter (g or ml). The calculation results shall be retained with three significant figures. Food with selenium content ≥0.150 mg/kg is classified as selenium-rich food, while food with selenium content ≥0.075 mg/kg and <0.150 mg/kg is classified as selenium-containing food. 4. Data Application: Through the analysis and evaluation of the sampling inspection data, the detection of water quality and soil in this region and the supervision of the breeding process can be strengthened based on the sampling results, so as to improve the quality level of Sanmen mud crabs.
