This dataset contains LC-MS/MS quantifications of methylamines from an in vitro colon model study investigating the effects of a polyphenol-rich pomegranate extract on microbial trimethylamine (TMA) production from L-carnitine and choline. Batch fermentations were conducted using 1% human fecal inoculum, supplemented with either L-carnitine or choline, and incubated under anaerobic conditions (pH 6.6–7.1, 37°C) for 24 or 48 hours. Concentrations of L-carnitine, choline, gamma-butyrobetaine, and trimethylamine (TMA) were quantified using LC-MS/MS with isotopically labeled internal standards.
