Adzuki bean (scientific name: Vigna angularis), also commonly known as red bean, red adzuki bean, red small bean, and small bean, is rich in starch and thus also called "meal bean". It contains a relatively high level of lysine in its protein, making it suitable for mixing with cereal foods to make bean rice or porridge. It is also commonly processed into bean paste or used as an ingredient for pastries. The crop has strong adaptability: it tolerates both waterlogging and drought, has low soil requirements, is resistant to barrenness, and can grow in both clay and sandy soils, as well as in river valleys and mountainous areas. It matures early even when sown late, with a short growth cycle, and its cultivation techniques are simple, making it an excellent supplementary catch crop. Adzuki bean is widely cultivated throughout China, with major production areas concentrated in Jilin, Beijing, Tianjin, Hebei, Shaanxi, Shandong, Anhui, Jiangsu, Zhejiang, Jiangxi, Liaoning, Heilongjiang, Guangdong, and Sichuan.
